A delicious weeknight meatless Monday solution that will be on your table in less than 30 minutes. Serves 6-8 generously. Can also add ground meat if you would like.
You will need:
8 Oz Fresh or canned mushrooms (drained)
4 cups of Chicken Stock
½ C shredded mozzarella cheese
Optional:
1 pound ground beef, browned and drained
Directions:
1. In a 12” skillet combine Skillet mix with mushrooms and 4 Cups chicken stock. Bring to a boil and reduce and simmer for 15-20 minutes. Stir often to prevent sticking.
2. When noodles are cooked through to your desired consistency, turn heat off and sprinkle on ½ cup of mozzarella cheese.
3. Cover and let rest for 5 minutes prior to serving. Serve with a green salad to make a complete meal.
If using the optional meat, add in step one.
